All That Jazz – New Showcase Menu at The Victor

Starting the new year off strong, The Victor is adding a number of new food, drink and entertainment features. Starting January 10 and every Wednesday from 6 to 9 p.m., talented local vocal trio The Agency Singers will take centre stage at the restaurant and bring the house down with renditions of vintage-style classics including jazz, swing and ragtime in addition to popular modern music with a throwback twist. To pair with the dulcet tones of the trio, will be a brand new ‘Showcase Menu’. This menu brings together the best of farms, fields and oceans and wine pairings hand-picked from the Victor cellars. Showcase Menu at The Victor – Dinner

All That Jazz - New Showcase Menu at The Victor kanpachi carpaccio

The Kanpachi Carpaccio features calamansi yuzu kosho vinaigrette, mizuna, red onion, grapefruit. It was so light and refreshing and the calamansi yuzu kosho vinaigrette really packs a heated punch that compliments the fish beautifully.

The Victorious Roll is a work of art. New to The Victor menu, it features foie gras, Hokkaido scallop, wagyu, Northern Divine caviar, cucumber, shiso and Kabayaki sauce.

It is so decadent and each bite was heavenly. All the ingredients work so well together. The caviar adds a nice bit of saltiness to counter the richness of the roll.

All That Jazz - New Showcase Menu at The Victor Snake River Farms Zabuton Wagyu Parq Vancouver

The Snake River Farms Zabuton Wagyu features a gorgeous piece of wagyu, teriyaki glaze, asparagus and wasabi mashed potatoes. The wagyu was a perfect medium rare and so unctuous. The wasabi mash had a great kick that helps to balance the ultra richness of the wagyu.

All That Jazz - New Showcase Menu at The Victor Seared Scallop and Crispy Fraser Valley Pork Belly Parq Vancouver

The Seared Scallop and Crispy Fraser Valley Pork Belly features a Romesco sauce, sautéed kale and red wine jus. The scallops were perfectly cooked and the pork belly was so crispy and melt in your mouth. The Romesco sauce was really flavourful and went well with the pork and the kale.

Ending on a sweet note, we had to get their Basque Cheesecake ($15.00) and Crème Brûlée Donuts ($16.00). The Basque Cheesecake is a whole mini cheesecake topped with fresh citrus, citrus marmalade, blood orange sauce. It was not too sweet, and the citrus was the perfect topping.

The Crème Brûlée Donuts was a must order for me because I love crème brûlée donuts. The giant maple cotton candy cloud on top of the donuts is a show stopper as the dessert makes its way to your table. The crunch from the brûlée makes way to a soft fluffy donut filled with vanilla custard.

Showcase Menu at The Victor – Cocktails

To pair with their new Showcase Menu, The Victor also has a new list of jazzy libations. We got the Timeless Beauty ($21.00) which features Roku gin, sake, peach, matcha, bubbles and gold. It was light and refreshing, and the gold was a nice touch. There wasn’t a lot of matcha flavour, definitely a fruitier cocktail. We also got the Baby Love ($21.00) which features Grey Goose, Cynar, ginger, pineapple and coconut. This is a tropical number that goes down smooth with a strong pineapple flavour.

Worth a Try?

Yes! This is a must try menu for an indulgent night out. The Agency Singers add such a fun vibe to the evening and they have a great repertoire of songs. During my visit it was another guests menu and they sang an impromptu happy birthday song to them. Overall, I had an excellent time – the food and service was incredible and I highly recommend you try the Victorious Roll, Basque Cheesecake, Wagyu and Crème Brûlée Donuts.
