Tortellone di Porri Brasati (Tuscany)

Tortellone di Porri Brasati with braised leek, taleggio, lardo and Pecorino Pepato at Angela Pastificio

A delicate tortellone filled with braised leek and taleggio, finished with melted lardo and Pecorino Pepato. This was rich without being heavy, this was a beautiful example of how a few exceptional ingredients can create incredible depth of flavour. This was one of my favouite pastas of the night.

Barchette alla Vignarola (Lazio)

Roman “little boats” served with spring vegetables in burro bianco. I’ve never seen such a pasta shape before and it was a very whimiscal presentation. The pasta itself was remarkably delicate, allowing the freshness of the asparagus and mushrooms to shine.

Ferretti al Peperone Crusco (Basilicata)

Hand-rolled semolina pasta featuring Peperone Crusco di Senise IGP and pangrattato. The sweet, crispy peperone crusco added texture and complexity while showcasing a flavour profile rarely seen in Vancouver Italian restaurants.

Pisarei al Ragù Bianco (Piacenza, Emilia-Romagna)

This was a more familiar pasta dish, a traditional breadcrumb gnocchetti served with pork and veal ragù bianco. This pasta delivered pure comfort. The texture of the pisarei paired beautifully with the rich white ragù, creating what felt like the most rustic and soulful course of the evening.

“Raviolo Ottimo”

An egg yolk raviolo that served as the grand finale of the pasta progression. Perfectly executed and wonderfully indulgent. The richness of the egg yolk melds perfectly with the veal jus.
