If you haven’t already seen the viral video for the Wagyu Burger at ARC Restaurant with Chef Laurent Dagenais, you’ll definitely see it soon. I had the opportunity to recreate that same experience at the Fairmont Waterfront rooftop garden and it was such a treat. This decadent burger is piled high with Hiro wagyu, foie gras, onion jam, cheddar, fried egg and smoked bacon. Created by Executive Chef Adam Middleton, this burger is BC-based through and through. The Wagyu Burger is available at Lunch and Dinner for $48 and includes a side of fries or salad. The quality of the ingredients really shine in this burger. It’s a really indulgent burger so I definitely recommend sharing it with someone else!
The brioche bun from Portofino Bakery was so soft and fluffy. They toast it in the foie gras fat for that extra hit of flavour. The onion jam is slow cooked for hours and naturally sweet. It is a perfect counter to the richness of the other ingredients.
The fried egg yolk oozing over all the ingredients just really brings the whole burger over the top.
Overall, this is worth a try if you’re looking for a cool bucket list food item in Vancouver. All the ingredients work well together and it is such a lush creation. The price tag is steep, but for the ingredient quality I think it is worth a try. Order this with a lunch salad and I think you’ll be golden. Life is about balance after all.
