Kokoro Tokyo Mazesoba is already one of my favourite places for noodles in downtown Vancouver. Although the restaurant is best known for its Japanese mazesoba, its seasonal chilled noodles are especially refreshing during the summer.
A New Summer Lunch in Downtown Vancouver
The highlight of the set is Kokoro’s Hiyashi Bowl, a cold Japanese noodle dish made for warmer days.
Guests can choose between the Chilled Sesame & Seafood Noodles or Spicy Seafood Cold Noodles. Both bowls are topped with salmon, scallops, ikura, cucumber, seaweed and a soft-boiled egg. Cold noodles are one of my favourite things to order during the summer, and these bowls did not disappoint. The noodles had the perfect slightly chewy texture, while the seafood, fresh toppings and sauces made every bite feel balanced and refreshing.
The Chilled Sesame & Seafood Noodles feature a rich, creamy sesame sauce that coats every strand. The fresh cucumber and seafood balance the richness, making this the better choice if you enjoy creamy and nutty flavours.
For more heat, the Spicy Seafood Cold Noodles are tossed in a savoury seafood sauce with a spicy, umami-packed finish.
