In a large bowl combine your softened cream cheese, vanilla extract and sweetened condensed milk until smooth with an electric hand mixer. Your mixture will have some lumps. Set aside.
In another large bowl pour your whipping cream in and beat on high with the mixer until soft peaks.
Combine the goat cheese mixture into the whipped cream and mix on medium low until well incorporated.
Scoop one layer into a pan (I used a circle pan but any pan is fine) and drop your blueberry compote around and swirl it in. Add the next layer of goat cheese cream mixture and repeat until your pan is full.
Top with additional blueberries if desired. Freeze overnight.
When serving, set it out for 15 minutes so the ice cream will soften and be very smooth and creamy.
