Honey Goat Cheese Blueberry Ice Cream Recipe

In honour of National Goat Cheese Month I was challenged by Celebrity Goat to create a recipe with their goat cheese. I am a huge fan of goat cheese, so I was very happy to do so. I didn’t want to just make a charcuterie board or add it to a burger, so I thought with the hot summer heat why not make a dessert! The tanginess of the goat cheese pairs really well with blueberries in this goat cheese ice cream. The end result is that this ice cream tastes like a lush blueberry cheesecake. It’s no churn, so you do not need any specialty tools. With just a few simple ingredients and some patience you can whip up this no churn Honey Goat Cheese Blueberry Ice Cream in no time!

No Churn Honey Goat Cheese Blueberry Ice Cream

Prep Time 15 minutes
Freeze time 8 hours

Ingredients
  

  • 227 grams Celebrity Goat Honey Goat Cheese
  • 200 grams Sweetened Condensed Milk
  • 1 tsp Vanilla Extract
  • 473 ml Heavy Whipping Cream, chilled
  • 250 grams Blueberry compote

Instructions
 

  • In a large bowl combine your softened cream cheese, vanilla extract and sweetened condensed milk until smooth with an electric hand mixer. Your mixture will have some lumps. Set aside.
  • In another large bowl pour your whipping cream in and beat on high with the mixer until soft peaks.
  • Combine the goat cheese mixture into the whipped cream and mix on medium low until well incorporated.
  • Scoop one layer into a pan (I used a circle pan but any pan is fine) and drop your blueberry compote around and swirl it in. Add the next layer of goat cheese cream mixture and repeat until your pan is full.
  • Top with additional blueberries if desired. Freeze overnight.
  • When serving, set it out for 15 minutes so the ice cream will soften and be very smooth and creamy.

Flavour Combinations

I use BC Blueberries because they are in season, but I think this recipe would be delicious with other fruits. It will be really fun to experiment with cherries or stone fruits in the future. I think it would even work great with Biscoff! There is so many flavour combinations that could work in this ice cream. The best part is the goat cheese immediately makes it taste like a cheesecake.

Overall this is a very easy recipe to create at home and is a must for goat cheese lovers! I adore the goat cheese from Celebrity Goat and it was a pleasure to work with them. For this recipe the honey goat cheese is the best fit, however their savoury goat cheeses are also amazing.
