Pendulum Magazine is hosting round two of their cocktail-tasting collaborative event on Saturday, November 16th from 5:00 to 8:00 PM, taking place at 89 Smithe Street. This time they will be featuring award-winning bartender and Bacardi Portfolio Ambassador for B.C. – Kevin Brownlee.
He will be crafting a cocktail featuring Granville Island’s Artisan SakeMaker‘s premium Osake Junmai Sparkling. The cocktail will also highlight Rubino Vermouth and St. Germain Elderflower Liquer.
This delightful sake cocktail will be paired with delicious Japanese inspired canapés crafted by food stylist and chef Juno Kim.
- FISH – Sake cured tuna albacore on mushroom crackers with charred and pickled cucumbers, Granny Smith
- CHICKEN – Kasu torched chicken skewers with cilantro, crispy shallots and walnut crumble
- VEGAN – roasted carrots, vegan furikake, flowers
The cocktail starts of strong, but ends with a slightly fruity and floral finish. It paired well with the delicious canapes. Every bite was delightful and packed with umami flavour. My stand out favourite was the chicken that incorporated kasu (the lees left over from sake production).
