Cucumber Salad with Sesame Dressing

Summer is approaching fast and with it hot weather and lazy days. The last thing I want to do is turn on the stove to cook when the temperature outside is so hot. So, one of my go to snacks and side dishes is this super simple Japanese cucumber salad with sesame dressing. It only takes a few ingredients and requires no cooking! I use a store bought sesame dressing but you can always make your own using this recipe!

I use baby cucumbers because I find that they have fewer seeds, but any kind of cucumber is fine. If you use an English cucumber scrape out some of the seeds with a spoon. Slice your cucumber in half and cut them into diagonal slices.

Place them in a bowl and pour 1-2 tablespoons of sesame dressing. Make sure it’s lightly dressed. Add the juice of 1/2 a lime and toss to coat.

Sprinkle on toasted sesame seeds just before serving! Simple and easy to make with a delicious tang. Eat it on its own or as a side with a delicious sandwich! This dish does not keep well, so ensure you make the amount that you intend to eat.

Cucumber Salad with Sesame Dressing

Ingredients

  • 2 baby cucumbers
  • 2 tbsp sesame dressing (I used Kewpie brand)
  • 1/2 lime
  • 1 tbsp toasted sesame seeds

Instructions

  • Wash and slice cucumbers in half. Cut diagonally into 1/4" pieces.
  • Place in a bowl and add one tablespoon of dressing per cucumber.
  • Squeeze the juice of half a lime on top. Toss to coat.
  • Sprinkle toasted sesame seeds on top just before serving. Enjoy!
