Next up on my mentaiko cooking spree – Mentaiko Kimchi Udon. It’s a simple and comforting dish with a salty briny flavour from mentaiko balanced with the punch of kimchi. It’s also relatively inexpensive, but is an impressive looking dish to serve to your guests. Try out this 5 ingredient Mentaiko Kimchi Udon for your next meal, you won’t be disappointed!

5 Ingredient Mentaiko Kimchi Udon

The only ingredients you need for this dish are – udon, kimchi, butter, mentaiko and green onion. If you want to really impress you could definitely add an egg yolk on top. However, it is definitely not necessary!

In a pan melt your butter over low heat. Scrap out your mentaiko from the sac, this is super important. The membrane, while edible, isn’t the most pleasant texture. Add your mentaiko to the butter and mix well.

Prepare your udon according to package directions. Add your udon to the butter and mentaiko mixture and combine thoroughly. Add in your chopped kimchi and mix. Sprinkle green onion (or nori!) on top and it’s ready to serve! This dish is such a quick meal for those busy weekend days.

Here are a few with a yolk just for that aesthetic shot. I can’t resist putting eggs on everything (and this dish is no exception!). If you’re not a fan of kimchi just omit it – the dish will still be very tasty.

PRO TIP: If you need to clean out your fridge you can always add mushrooms, spinach, onions etc!

Ingredients
  

  • 1 package frozen udon
  • 2 tbsp butter
  • 2 mentaiko sacs
  • 1/2 cup kimchi
  • green onion (for garnish)

Instructions
 

  • In a large pot prepare your frozen per package instructions.
  • In a non stick skillet, add your butter and stir fry kimchi for a few minutes.
  • Add your cooked udon and combine together.
  • Turn off the heat, and add your mentaiko. Mix all ingredients together thoroughly.
  • Serve with chopped green onion. Nori and egg yolk is optional!
