If I had to pick one vegetable to eat for the rest of my life it would be potatoes. I’m genuinely happy with a simple baked potato with sour cream and chives. But, the potato is such a versatile vegetable. Here is a very simple, super easy to make 4 ingredient potato nuggets recipe that will have even potato haters asking for more! These potato nuggets only require four ingredients, most of which you probably already have at home, The outside of these nuggets are so crispy and the inside is soft and fluffy. You won’t be able to stop snacking on these. Bonus – this is a vegan friendly recipe!

Pair this with ketchup or my favourite sauce mix of Japanese mayo, Sriracha and ketchup for a tangy spicy sauce!

TIPS:
– The smaller the ball, the faster the cook time!
– If you flatten them slightly there will be more crispy surface area.
– Don’t over mix the potato and cornstarch mixture or your final product won’t be fluffy and light.

You can make these as simple or as cute as you want design wise. For the fastest method I’d make these into ball shapes and flatten slightly (about 5 grams per ball). But you can also make the using cute cookie cutters like I did. Here is a set similar to the one I used with much deeper grooves so the Sakura pattern is more obvious.

4 Ingredient Potato Nuggets

Prep Time 5 minutes
Cook Time 35 minutes
Total Time 40 minutes

Ingredients
  

  • 300 grams yellow skin potatoes
  • 30 grams cornstarch
  • 10 grams seasoning of choice
  • Oil

Instructions
 

  • Wash, peel and cut your potatoes into smaller pieces.
  • Place your potatoes in a steam proof dish and cook until fork tender.
  • Mash your potatoes until almost smooth (a few chunks is fine).
  • Add your seasoning and mix to combine.
  • Add your cornstarch and mix to combine.
  • Shape into balls (or use a cookie cutter to make cute shapes).
  • Place into your airfryer and brush or spray the nuggets with oil.
  • Air fry at 280C for 25 minutes. Enjoy with mayo or ketchup!
