Bar Corso Valentine’s Day Cocktail Features and New Spring Menu Items

Bar Corso has a special Valentine’s drinks menu running from February 4th till the 14th, with four feature cocktails. I am a huge fan of their cocktails and these limited edition cocktails are incredible. The price point of their cocktails are also really good and this is such a great cozy and romantic spot for drinks. Check out my review of Bar Corso Valentine’s Day cocktail features and new spring menu items below.

Bar Corso – Valentine’s Day Cocktail Features

Sanguine ($16.00) – Cazadores Reposado, Montenegro Amaro, lime, blood orange & bay leaf syrup, Campari & blood orange foam (contains eggs). This was really light and refreshing and a very easy to drink cocktail.

Triple Black Manhattan ($15.00) – Jim Beam black bourbon, Cinzano sweet vermouth, Elixir cherry liqueur, black cherry syrup, nocino, black walnut bitters.

Corso Cosmo ($14.00) – skky vodka, cointreau, lime, hibiscus & rose syrup. I was a bit worried about this one, because I’m not a huge fan of rose flavours, however this was quite light on the rose notes and leans more into the hibiscus flavours which I prefer.

Bar Corso - Valentine's Day Cocktail Features fun bars on commercial drive in vancouver Prosecco Cocktail

“Classic” Prosecco Cocktail ($14.00) – 12 prosecco, sugar cube, bitters, aperol float, lemon twist. This is such a bubbly and effervescent drink. It sparkles on the palatte and is such a fun celebratory cocktail.

Bar Corso – New Menu Items (Starters)

I’m a huge fan of the food at Bar Corso, and I love that Executive Chef Luke Boswell is always changing up the menu depending on the seasons and the freshest ingredients available. The menu is almost completely different from the last time I came (which wasn’t even that long ago!), so you know I had to try a bunch of the new offerings.

  • Ostrica ($5.00)
  • Gamberetto ($17.00)
  • Taleggio Al Forno ($24.00)

To start we have the Ostrica which is a local oyster, prosciutto fat and citrus caviar. The presentation was beautiful and rustic. The oyster was fresh and the citrus caviar adds a nice pop.

Next we have the Gamberetto. It is a wild shrimp crudo, fermented habanero, pickled garlic & mint. This dish was exceptional. The presentation is just beyond gorgeous and the taste is spicy, sweet, and fresh. I really enjoyed this dish and I would highly recommend you order this. Be careful of the habanero though, it packs a massive punch (in the best way).

The Taleggio Al Forno is a great share dish that features baked Taleggio, honey fermented garlic, thyme, walnuts & house sourdough. The cheese is ooey and melty and the honey fermented garlic is a revelation. It goes so well with the rich base. The walnuts add a great crunch and their house sourdough is top tier.

Bar Corso – New Menu Items (Pasta and Mains)

Moving onto a couple more substantial dishes we went with:

  • Agnalotti ($29.00)
  • Petto ($37.00)

The Agnalotti is made fresh in house and on my visit it was fulled with duck and had an Asiago chicken jus & sage. The pasta was perfect and the filling was meaty and earthy and pairs really well with the umami jus. The crispy sage adds a nice textural contrast. A very homey dish that has been elevated with precise pasta work.

The Petto features a braised wagyu brisket, sunchoke puree, marinated radish, balsamic jus & crispy rosemary. The wagyu brisket was tender and broke apart easily with a fork. The marinated radish adds a freshness to the rich dish and the crispy rosemary adds a nice herby note to the dish.

Worth a Try?

Yes! I have always been a huge fan of Bar Corso and their new features menu is excellent. I highly recommend you check out their Valentine’s Day features before they end on February 14. It’s a great spot for Valentine’s Day dinner, a girls night out or even a drink at the bar.
