Part of the Park Royal experience is that they have tables in addition their bar seating. Now, they are bringing the fresh hand roll experience straight to your table. Premium nori is kept perfectly crisp, warm seasoned rice is layered with high-quality seafood and wagyu, and every roll is passed to guests seconds after it’s prepared, ensuring that signature crunch that Hello Nori is known for.
What makes this one of the most exciting new dining experiences in Vancouver is the interactive element. Guests can enjoy chef-led preparation or opt for a DIY hand roll experience, creating their own customized combinations tableside. It’s immersive, elevated, and ideal for date nights, group dinners, and anyone searching for a unique dining experience.
The DIY hand roll experience is very unique and something I have never seen in Vancouver. The ‘roll’ is served on an offset spatula and you left up the entire roll and pop it onto a fresh piece of nori and roll. It’s fun, easy and delicious! There are so many options to choose from but the highlights for me were: Bafun Uni (MP), Negi Bluefin Tuna ($8.00), Aburi King Salmon with Ikura ($9.00) and Aburi A5 Wagyu ($27.00).

The Wagyu Tartare features lush, finely chopped wagyu with a richness that melts almost instantly on the palate. The crispy lotus root chips add an earthy crunch, creating contrast against the buttery beef, while the wasabi crème fraîche brings a gentle heat that lingers without overpowering. An indulgent and delicious way to start dinner.
The Aburi Wagyu Tataki is lightly seared and beautifully marbled. The wasabi chimichurri adds herbaceous vibrancy and the bright notes of yuzukosho ponzu cut through the richness of the beef. A lighter but still indulgent wagyu appetizer.
The Braised Wagyu Short Rib is impossibly tender. The meat just comes apart effortlessly and the richness of the beef pairs so well with the velvety truffle mashed potatoes. Seasonal vegetables add freshness and colour, while a touch of wasabi crème fraîche brightens the plate just enough to keep it balanced. It’s decadent without being heavy – a standout entrée.
The Saikyo Miso Sable Fish is so buttery and perfectly sweet from the saikyo miso. The light dashi broth enhances its natural depth, while airy yuzu foam introduces a subtle citrus lift that keeps the dish feeling elegant and refined.
