The Parker Rooftop is located in the heart of Downtown Vancouver’s Beach District. The Rooftop is 120 feet above the city at the Parker Hotel (formerly Executive Vintage Park). This gorgeous space features three breathtaking patios and an interior space with 20 foot floor to ceiling windows with the most gorgeous views. Parker Rooftop – Signature Cocktails

Parker Rooftop has an excellent selection of signature cocktails as well as ‘PR Smash Pitchers’. The PR Smash Pitchers come in Gin (Gin, Yuzu, lemon, orange, mango, mint, soda), Tequila (Tequila, lime, basil, Kaffir leaves, mint, soda) and Bourbon (Bourbon, lemon, mixed berries, mint, soda). I definitely want to try this next time! The Signature Cocktails we went with on our visit:

  • Fizzy Business ($17.00) Vodka, Chambord, rosemary, blackberry, lemon, egg white
  • Devil in Disguise ($21.00) Mezcal, Cointreau, lime, rosemary, chili

The cocktails here are well balanced and delicious! We went with a fruity one – Fizzy Business and it definitely delivers. It was a light and refreshing cocktail. The Devil in Disguise will be a favourite for anyone who loves spicy cocktails! This one packs a huge punch and it was spicy!

Parker Rooftop – Dinner Starters

  • Bread ($14.00)
  • Fish and Chip Cones ($18.00)
  • Beef Tartare ($28.00)

The bread service here is excellent. It features their house made sourdough as well as crisps and crackers and they pair so well with the dips. My personal favourite was definitely the tomato jam and the Maitre d’Hotel butter. Maitre d’Hotel is a classic French compound butter made with parsley, lemon juice and salt.

The Fish and Chip Cones features sushi rice, soy paper, crispy tempura, pickled ginger, tartar, cucumber, caviar. The soy paper is an interesting alternative to nori. I like that it doesn’t get soggy! The flavours are interesting, but I will pass on this next time.

The Beef Tartare features Brandt Lake wagyu, smoke, egg yolk cream, pickled mushrooms, potato chips. This beef tartare was so good! I think it’s one of my top beef tartares in Vancouver. The wagyu is so tender and I like that the chunks are cut a little bigger so the beef flavour really come through. The pickled mushrooms are so cute and add the perfect touch of acidity to the dish. A must get dish for sure!

For dinner we went with the following:

  • Scallops ($36.00)
  • Tenderloin ($58.00)
  • Roasted Beets ($14.00)
  • Grilled Broccolini ($16.00)

The Scallops have the most stunning platting. The Green Goddess emulsion is poured table side and its just the most velvety smooth sauce for the scallops. The dish features potato, fennel, chili oil, tempura crumble. The scallops are perfectly seared and everything works so well together in this dish. This was definitely one of my favourites.

The steaks at Parker Rooftop are finished tableside with Maitre d’Hotel butter brulee served with jus, peppercorn sauce, chimichurri & signature steak sauce. If you’re feeling particularly fancy you can always add shaved truffle, taleggio and blue cheese brulee or even torched foie gras! We went with the Tenderloin and the final torch at the table was definitely eye catching! To pair with our steak we got Roasted Beets and Grilled Broccolini. The beets have honey, thyme, spiced yogurt, candied nuts. The earthiness of the beets really pair well with the sweetness of the honey and the nuts. The broccolini has a cheese sauce, shaved egg yolk, fresh herbs. It was such a rich and decadent preparation of a classic dish.

Worth a Try?

Absolutely! I came by when they first opened earlier this year and I really liked the vibes. Since then they have completely overhauled their food menu and the new dishes I tried today were excellent. Everything was so delicious. The standouts for me was the Bread, Scallops, Beef Tartare and their cocktails. I can’t wait to be back to try more dishes! I was too full this time but their Baked Alaska sounds incredible. It features a banana butter cake, vanilla bean ice cream, italian meringue, grand marnier flambée!
