If you’re looking for fine dining in Vancouver that balances sophistication with innovation, Hawksworth Restaurant’s new menu is worth putting at the top of your list. The refreshed menu stays true to the restaurant’s classic foundation while embracing fresh ideas, vibrant seasonal ingredients, and a modern, brasserie-style spirit. Led by Executive Chef Sylvain Assié, the refreshed menu leans into global influence—Japanese technique, French elegance, and the West Coast’s signature seasonal ingredients—all while staying true to Hawksworth’s legacy of modern Canadian cuisine. Hawksworth – Menu Highlights (Appetizers and Small Plates)
I had the opportunity to stop by earlier this month to sample the new menu. To start we tried:
- The Hawksworth Tower (Two Tier – $179) – freshly shucked oysters, mussels, argentian prawns, dungeness crab, tuna crudo, ceviche, 1/2 nova scotia lobster
- Spring Salmon Gravlax ($19.00) – beet cured, avocado, horseradish
- Fremantle Albacore Tuna ($37.00) – fratori extra virgin olive oil, yuzu kosho
- Burrata di Puglia ($29.00) – slow cooked vinegar peppers, grilled focaccia
- Fresh Housemade Focaccia ($12.00) – sun-dried tomato, green olive, parmesan

If you love seafood, The Hawksworth Tower is a dream. It comes loaded with super fresh oysters, sweet prawns, tender crab, and a buttery half lobster. The tuna crudo and ceviche were full of citrusy, bright flavours.

It’s a bit of a splurge, but it’s perfect for sharing on a special night. Definitely the star of the table.

The Spring Salmon Gravlax light, fresh, and full of color. The beet gives the salmon a beautiful pink hue and a touch of sweetness. The creamy avocado balances it out, and the horseradish adds just the right kick. It’s a great starter.

The Fremantle Albacore Tuna is simple but packed with flavour. The tuna is super tender, and the olive oil makes it feel rich. The yuzu kosho adds a little spice and brightness that brings everything together. If you like clean, fresh flavours, you’ll love this.

The Burrata di Puglia is a classic dish done right. The burrata was creamy and smooth, and the peppers gave it a sweet and tangy bite. The focaccia it comes with is grilled and just the right amount of crispy.

Speaking of focaccia, this one is a must. It’s warm, fluffy, and full of flavour from the olives and sun-dried tomatoes. The parmesan on top makes it even better. Great for snacking or pairing with pretty much anything on the menu.
Hawksworth – Menu Highlights (Large Plates and Sides)
Moving on to the main portion of the menu, we tried:
- Grilled West Coast Halibut ($49.00) – cucumber & cilantro salad, coconut curry
- Miso Marinated Haida Gwaii Sablefish ($51.00) – chili threads
- Caramelized Fraser Valley Chicken ($36.00) – prawn mousseline, oyster mushroom, ponzu butter
- In-House Dry Aged Beef Striploin ($58.00) – morel & brandy sauce
- Baby Bok Choy ($18.00) – shallot, chili, garlic
- Truffle Fries ($19.00) – parmesan, chives
- Roasted Cauliflower ($18.00) – sultana, sunflower seeds, cilantro, turmeric

The Grilled West Coast Halibut is grilled perfectly, the fish is flaky and not dry. The coconut curry underneath added warmth and richness, and the cucumber salad on top kept it bright and refreshing. It’s a great pick if you want something flavorful but not too heavy.

The Miso Marinated Haida Gwaii Sablefish is a must order dish. The sablefish is rich and buttery and just melts in your mouth. The chili threads add just a touch of heat and it pairs so well with the sweet-salty glaze of the miso marinade.

If there is one dish you try from Hawksworth it needs to be the Caramelized Fraser Valley Chicken. This is not your average chicken dish. The caramelized skin is crisp and flavorful, and the prawn mousseline adds a really unique and luxurious component to the dish. The ponzu butter sauce brings it all together with a tangy richness. Great mix of comfort food and creativity.

The In-House Dry Aged Beef Striploin is super tender and full of deep, beefy flavor. The morel mushroom and brandy sauce is rich, earthy, and totally delicious. This dish feels classic but still elevated.

The Truffle Fries are crispy, golden, and full of truffle flavor without being overwhelming. The parmesan and chives take them up a notch. A great snack or side – you’ll definitely want to share (or not).

The Roasted Cauliflower was a surprise hit. The cauliflower is roasted until golden, with a mix of sweet sultanas, crunchy sunflower seeds, and herby flavors. The turmeric adds warmth and color. It’s hearty enough to be its own dish but works great as a side too.

And of course no meal is complete without a sweet ending. For dessert we went with:
- Vanilla Crème Brûlée ($16.00) – hibiscus poached rhubarb, earl grey, blood orange, puffed amaranth
- Baked Alaska ($18.00) – vanilla ice cream, pineapple sorbet, passionfruit ice cream, coconut cake

The Vanilla Crème Brûlée has a very unique and beautiful presentation. It’s poured into a flatter bowl so there’s more crackly sugar top to go around. The hibiscus rhubarb adds a tangy, floral twist, and the Earl Grey and blood orange bring a subtle citrusy aroma. The puffed amaranth gives it a fun little crunch. Light, elegant, and not overly sweet.

The Baked Alaska is a tropical dream. You get a perfect balance of creamy, tart, and fruity flavors all wrapped in a toasted meringue shell. The coconut cake at the base is moist and adds just the right amount of texture. It’s dramatic, fun, and delicious, definitely a “wow” dessert to end the night on.
Worth a Try?
After tasting so many standout dishes from Hawksworth’s new menu, it’s clear why this restaurant remains one of the top choices for fine dining in Vancouver. It’s not just about the food—though every dish is thoughtfully prepared and beautifully plated—it’s the whole experience: warm, attentive service, expertly crafted cocktails and wine pairings, and a space that feels both refined and welcoming.
