Mello is opening a spacious new cafe in Vancouver’s West End, and I had the opportunity to get a sneak peek inside before its official opening. The new Mello Robson Street location features two floors of seating and a thoughtfully designed interior filled with warm neutral tones, soft curves and playful pops of yellow. It is easily one of the most aesthetic cafes in downtown Vancouver and an inviting place to meet friends, enjoy a coffee date or take a break while exploring Robson Street.

The new location will carry the fluffy filled brioche donuts that made Mello so popular, but it is also introducing something completely new: savoury donut sandwiches and Mello’s own take on Japanese fruit sandos.

Yes, Mello is turning its signature brioche donuts into sandwiches! Between the creative new menu and the two-level cafe space, I have a feeling this will quickly become a popular Vancouver cafe spot.

Located at Landmark on Robson, the new Mello cafe is joining one of downtown Vancouver’s busiest shopping and dining areas.

The Robson Street location marks a new chapter Mello. They currently operate their original Chinatown shop and a counter inside Time Out Market Vancouver at Oakridge Park. However, the new West End cafe gives customers a larger space where they can sit down and enjoy their donuts, sandwiches and drinks.

The two-level interior carries Mello’s recognizable aesthetic, with warm neutral tones, soft curves and playful yellow accents. The pastry counter puts the colourful selection of donuts on full display, while the additional seating makes this feel like much more than a quick takeout stop. It is bright, inviting and designed for lingering over coffee and donuts, whether you are meeting a friend, stopping for dessert or taking a break while shopping on Robson Street.

The biggest surprise at the new Mello Robson Street location is the introduction of savoury donut sandwiches.

The result is something between a brioche sandwich and one of Mello’s signature donuts. The new savoury donut sandwiches I got to try include a ham with cheese, a creamy truffle cheese and arugula as well as a sundried tomato with salami, cheese and arugula. Classic combinations that are elevated with the sweet brioche donut.

Mello’s Take on Japanese Fruit Sandos

Mello is also bringing its own interpretation of Japanese fruit sandos to Vancouver.

Traditional Japanese fruit sandos are generally made with soft shokupan, whipped cream and fresh fruit. Mello’s version replaces the milk bread with its signature brioche donut, transforming the familiar Japanese convenience-store treat into a dessert that feels distinctly Mello.

Yes! I have loved Mello from the beginning and it is so exciting to see their newest (and most stunning location). Longtime customers will still find the fluffy brioche donuts they know and love, but the new menu gives Mello a fresh identity. The savoury donut sandwiches are playful without feeling gimmicky, and the fruit donut sandos offer a creative twist on a Japanese classic.
